Recipes That Hide Vegetables

Picky eaters can be hard to cook for especially when they’re picky about vegetables. We’ve found some recipes that “hide” veggies. They might not know they are there but they will be adding more vegetable servings than normal.

Here’s what we’ve found:

Baked Ziti

This recipe incorporates zucchini, spinach, and mushrooms. They seem to be “hidden” when you bake everything together. Here is a list of ingredients you would need:

Ingredients

  • 1 box 1 lb ziti

  • 1 medium zucchini
  • 2 cups spinach
  • 4 oz mushrooms
  • 3 tblsp parsley 1 for garnish
  • 8 oz part skim ricotta cheese

  • 1/2 cup shredded parmesan
  • 2 tsp dried oregano

Veggie Pizza Rolls

“Veggie packed pizza rolls are a delicious idea for tricking kids who love pizza but hate veggies!” These pizza rolls include spinach, green pepper, tomato, carrot, and mushroom, its veggie packed but tastes so good! Here’s what you’ll need:

Sauce

  • 1/4 cup – spinach
  • 1/2 medium – bell pepper, green

  • 1 medium – tomato, red
  • 1 medium – carrot
  • 1 medium – zucchini
  • 1 cup – spaghetti or marinara sauce

Crust

  • 1 cup – flour, whole wheat

  • 1/4 teaspoon – yeast, active dry
  • 1/2 teaspoon – sugar
  • 3/4 teaspoon – salt
  • 2/3 cup – water
  • 3 tablespoon – olive oil
  • 1/2 cup – mozzarella cheese

Hamburger Buddy

“Very finely chopping onion, mushrooms and carrots in the food processor is not only fast—it makes the vegetables hard to detect for picky eaters. They also form the base for the sauce of this ground beef skillet supper.” Here is what you’ll need:

    • 3 cloves garlic, crushed and peeled
    • 2 medium carrots, cut into 2-inch pieces3756596

    • 1 large onion, cut into 2-inch pieces
    • 1 pound 90%-lean ground beef
    • 2 teaspoons dried thyme
    • ¾ teaspoon salt

    • 1 14-ounce can reduced-sodium beef broth, divided
    • 8 ounces whole-wheat elbow noodles, (2 cups)
    • 2 tablespoons Worcestershire sauce
